The
preparation of the cuvee takes place at the end of December or
the beginning of January, in presence of May Eliane de Lencquesaing
and the chateau oenologist, in company of the consultant oenologists
Jacques Boissenot and Hubert de Boüard. The tanks that will
make up the Grand Vin and the Réserve de la Comtesse are
chosen, always with the very same attention to detail. A third
selection is made up of the younger vines of the property.
